Serves 4 to 6
1 – 2 onions, as desired
1 cup pre-cooked green peas or French beans (optional)
salt to taste
2 carrots finely chopped
1 large red bell pepper (hoho) finely chopped ( red, yellow and green each)
4 tablespoons oil for stir-frying, or as needed
4 cups cooked rice
Wash and finely chop the onion.
Fry the onions until golden brown.
Add in the peas, carrots, bell pepper, and salt. Stir until the peas are cooked and tender.
Add the rice. Stir-fry for a few minutes, using a wooden spoon to break it apart.
Serve hot with chicken or beef stew.
